5 Recipes Both Moms And Kids Can Agree Are Delicious

Finding food that all the family can enjoy is sometimes a challenge. It’s one of life’s daily chores, and something that all families can struggle to achieve. 

Fortunately, there are a bunch of recipes out there that everyone will love. They’re so moreish that they bring the entire family together - mom included. Check them out below. 

Spicy Chilli And Crab Bruschetta

Crab is delicious. So too is bruschetta. So why not combine them both and have a kind of tapas night? 

To make this meal, start by preparing the crab. The easiest way to do this is to buy it pre-cooked and then simply heat it up. If you want it fresh, you can also get crab meat raw. To cook, simply prepare in a non-stick pan with some butter or olive oils. 

For the chillies, choose a variety that isn’t too spicy and then roast them in the oven, a bit like how you might roast peppers. The result should be a delicious, slightly charred and soft chilli you can add as a topping. Then just toast your bruschetta and assemble the open sandwich, drizzling a little olive oil and lemon over the top to taste.

Egg Hoppers With Green And Red Sambol

Egg hoppers are a staple of Sri Lankan cooking and something that they regularly eat over there for breakfast. 

Let’s start with the egg hopper. This is a little bit like an omelette except with flour. Usually, you start with a kind of pancake mix - rice flour, baking powder, coconut sugar, coconut water, fresh coconut flesh and sunflower oil. You begin by mixing all of these ingredients together in a food processor to make a batter. Then you place the batter in the refrigerator overnight to settle. 

The next day, you pour the batter into a hot pan, creating a light, thin film. Wait around a minute or so until the edges start peeling upwards and then crack an egg in the center of the dish. Wait for around three minutes until the egg white is cooked, but the yolk remains runny. Then add the hopper to a plate. 

Making the green and red sambol is easy. 

For the green sambol, combine fresh coconut, kale, shallots, coriander, lemon zest and fish sauce in a blender. 

For the red version, combine chopped eschalots, red chillies, ginger, garlic, turmeric, cherry tomatoes, palm sugar, rice vinegar, fish sauce and sunflower oil. 

Then simply serve alongside the hopper and enjoy. 

Ceviche

If you’ve never made ceviche before, you’re in for a treat. This delicious dish is both simple and filling. 

You can find all the basic ingredients for Mexican ceviche at yellowblissroad.com. But it’s pretty simple. All you need are some raw-peeled shrimp, lemons, serrano chillies, and salad ingredients. It’s just a matter of cooking the shrimp and then combining all of the ingredients into a delicious dish. 

Minty Lamb

Lamb and mint sauce go hand in hand. But doing this recipe well requires careful attention. 

Making fresh mint sauce is so much better than getting it from the store. Plus, it allows you to experiment more with different ingredients to suit your taste buds. 

To make fresh mint sauce, combine mint, parsley, parmesan, pine nuts and garlic in a food processor to create a paste. Then add half a cup of olive oil slowly while the food processor is in motion. 

Next, brush the lamb cutlets with some olive oil and baste with dried mint. 

If you want to add broccoli, start by tossing it in olive oil and then add it to a chargrill pan. Cook the broccoli for around three to four minutes on each side. Then add the lamb and also cook it for three to four minutes on each side. 

Then it’s just a matter of arranging your plate. Start with some watercress and beetroot. Then add the broccoli and lamb, topping off with your oily mint dressing pesto.

Satay Noodles

Satay noodles are delicious and should certainly be something that the whole family can enjoy without much fuss. 

To make these, you’ll want to start by making a delicious satay sauce. This is the most challenging part of the whole process. 

The ingredients you’ll need are half a lime, some clear honey, soy sauce, curry powder, peanut butter and coconut milk. Combine all of these ingredients in a food processor. 

Next, add the noodles to a pan and follow the instructions for how to cook them. Finally, mix the noodles with the sauce and top with various meat and veggie toppings of your choice.
